Acclaimed Spanish chef José Andrés is adding one more restaurant to his ever expanding culinary empire. As a testament to the rising popularity of Peruvian cuisine, the chef will be opening a Chinese-Peruvian restaurant in Washington, DC, the Washington Post reports.
For now, the contemporary restaurant is being referred to as China Chilcano and is expected to open in spring 2014. As for the name, the word chilcano refers to a cocktail made with pisco and a popular Peruvian fish soup.
The 7,000-square foot restaurant will have 140 seats and be conveniently located in Penn Quarter on the same block as Jaleo and Oyamel, two of the chef's other popular restaurants. “I prefer to have a restaurant I know than one I can’t control...I like to keep it in the family,'' the chef told the Washington Post.

The menu is still in development but will feature Peruvian staples like ceviches and potato salads. It will also have fried rice dishes and dumplings that are popular in Chinese-Peruvian cuisine called chifa. So far, a head chef has yet to be appointed to the new restaurant
Andrés and his team at Think Food Group seem to have developed a winning formula for building restaurants. The chef's eateries have been well received by the public and food critics alike. Currently, é by José Andrés at The Cosmopolitan of Las Vegas is ranked as the best hotel restaurant in the world.
China Chilcano will come onto the dining scene at a time where the food of Peru and Peruvian ambassador chefs like Gastón Acurio and Virgilio Martinez are getting global attention.
