Ahead of the upcoming Latin America's 50 Best Restaurant Awards we'd like to introduce you to the three most influential chefs in Peru: Gaston Acurio, Virgilio Martinez and Micha Tsumura.
Each of these talented chefs has contributed to elevating their native Peruvian food to haute cuisine. In the following video from Zagat's Around The World Google + series you'll get to know their cooking philosophy a bit better.
Acurio is perhaps Peru's most well-known chef. His restaurant empire spans the globe but it's his restaurant Astrid y Gastón in Lima that ranks 14th on the World's 50 Best Restaurants list sponsored by S.Pellegrino and Acqua Panna.
Martinez cut his teeth working for Acurio and is rumored to be working on opening a restaurant with his mentor. Martinez's operates two restaurants: Lima in London now Central in Lima, which ranks 50th on the World's 50 Best Restaurants list.
Tsumura heads the Japanese-Nikkei restaurant Maido in Lima. He has also worked closely with Mistura, Peru's most famous food festival.
Latin America's 50 Best Restaurant Awards will be celebrated in Lima on September 4th.
