STEP 1

To cut tomatoes concasse you will need a pairing knife, which is small and perfect for the next step. Aside from a pairing knife, you will also need a chef knife and a small bowl. Now, using your pairing knife, carefully begin to peel the tomato. A concasse cut involves peeling, deseeding and chopping a tomato. In order to make the tomato easier to peel you will have to drop it in simmering water then plunge it into an ice bath.



STEP 2

For this step you will use a chef knife. Take the tomato, which was previously cut in half and deseeded, and carefully cut into strips. Gather the strips and cut in the opposite direction. Continue until you have cut all of the tomato. You will now have beautiful small cubes of tomato concasse.
