Soft white grape cake
Caster sugar: 100g/3.5 oz, superfine
Butter: 100g/3.5 oz
Eggs: 2, beaten
Self-raising flour: 150g/5.3 oz
Milk
White grapes: 300-400g/10.5-14.1 oz, seedless, halved

Preheat an oven to 180°C/350°F (160°C/320°F fan).
Butter a 25cm baking dish.
Beat the sugar and butter together until light.
Beat in the eggs until blended.
Gently fold in the flour and enough milk to give a soft dripping consistency.
Cover the base of the dish with a layer of halved grapes.
Spoon over the cake mixture, and top with the remaining grapes.
Bake the white grape cake for 35-40 minutes until golden brown.
Tips & tricks
- If the mixture begins to separate, beat in a little extra flour.
- Use a greased springform tin to make sure there’s no chance of sticking.
- Leave the cake to cool a little before turning it out onto a serving dish.
- Enjoy with clotted cream or a spoonful of softened mascarpone.
