If you’re in need of a midweek meal shake-up, then look no further than lemon pepper chicken. It’s the perfect way to take a humble ingredient, chicken, and give it a tasty new lease of life for an easy dinner option during the week. Find our lemon pepper chicken recipe below.

Method

01.

In a mixing bowl, combine the all-purpose flour, lemon pepper seasoning, salt, and zest from 1 lemon.

02.

Slice each chicken breast into 2 thinner pieces, so you have 8 pieces. Then add the chicken breasts to the flour mixture until completely coated.

03.

Heat a large pan over a medium heat, and then add the oil. When hot, add the chicken breasts and cook on one side until golden and crisp, for roughly 5 minutes. Then turn to the other side to cook.

04.

Whilst the chicken is cooking, slice the remaining lemon into rounds. Once the chicken is cooked through, remove from the pan and place onto a clean plate to set aside.

05.

Add the chicken broth, butter, minced garlic, and lemon slices to the pan. Cook for a few minutes until the sauce has reduced and thickened. You can use a whisk to remove any lumps.

06.

Add the chicken back to the pan to heat through, spooning the sauce over the breasts. Serve warm with a sprinkling of fresh parsley on top.

Tips & tricks

For this recipe, our top trick is to ensure you use thin-cut chicken, or take the time to filet the breasts before adding to the lemon pepper chicken seasoning. This allows the cuts to cook quickly and evenly in the pan for the best results. You can make lemon pepper seasoning at home if you’d prefer a more tailored approach; it’s a simple mix of lemon zest, pepper, citric acid, and salt. But most major stores will stock lemon pepper seasoning for an easy shortcut. Seasoning the chicken is a slightly quicker way to infuse flavor into the meat compared to marinating. If you’re interested in creating a lemon pepper chicken marinade instead, we have lots of helpful tips on how to marinate chicken in this article.

It’s best to use skinless chicken breast for this recipe, but you could experiment with more tender thighs if you prefer the taste. To find out more about different cuts of chicken, we have a useful guide on chicken parts to help you on your way.

How to serve it

Lemon pepper chicken is very versatile and can be enjoyed in a number of dishes. For a hearty midweek dish, try serving alongside a plate of pasta and let the lemon infuse the plate with zesty flavors. For a lighter option lemon pepper chicken is also really tasty alongside fresh vegetables, from roasted broccoli to asparagus. Chicken and rice is a classic combination, and you can try mixing in spinach to your rice for a color pop on the plate. Lemon pepper chicken is a delicious dish for the colder and warmer months alike, and if it’s a sunny day, you can cook the chicken on the BBQ instead for a grilled option.

Storage

Any leftover lemon pepper chicken can be stored in the fridge in an airtight container for up to three days. As with all meat, take care when reheating to ensure the chicken is fully heated through before consuming.
