There are many ways to dress up coffee. You can add a splash of cream, some milk or stir in non-dairy creamers or nut milks. But have you ever considered kicking up your cup of joe with xanthan gum?

Xanthan gum, a plant-based gelling agent, is a favorite of chefs who practice molecular gastronomy. It is commonly used to make foams and emulsions such as salad dressings. If it adds viscosity to sauces then what will it do to your coffee?

Enter Grant Crilly, the curious chef at Chefsteps. In this video he demonstrates how to use xanthan gum in coffee to yield a frothy, creamy, latte-like concoction.

The process is incredibly simple and surprisingly doesn't require an espresso machine (although you will have to hit up the baking aisle of your local grocery store to pick up some xanthan gum).
