How to Make Scrambled Eggs: English, French & American Recipe

Here’s a great video from Jamie Oliver’s Food Tube channel teaching you how to make perfect scrambled eggs in three different ways. The recipes come from Oliver himself as he walks you through English, French and American scrambled eggs.

English scrambled eggs

Whisk the eggs over a medium heat with a knob of butter and a pinch of salt. Move them around the pan with a spatula every few seconds to make sure they don’t catch on the bottom. Serve on a simple piece of toast while still slightly wet. Soft, delicate and “gorgeous” according to Oliver.

French scrambled eggs

French-style involves lightly season whipped eggs over a bain-marie. You have been warned, it takes quite a while (six minutes)! Use your trusty spatula as the eggs to set. With butter added at the end, you’re left with a much smoother and creamier texture, altogether more refined and elegant. Quintessentially French.

American scrambled eggs

That’s butter, salt and whisked eggs as usual, into a pan and a technique that uses your spatula to slowly fold the eggs in the pan over a gentle heat. This creates the roulade sheet “diner-style” eggs, delicate but substantial.
