Chef Rasmus Kofoed has completely reworked the menu of his Geranium restaurant in Copenhagen. With meat removed entirely from the menu, the dishes elevate plant-based elements along with fish and shellfish to create a fresh, positive offering full of flavour that draws from Kofoed's daily life.
