Three-Michelin-starred French chef Paul Pairet has announced that he will be opening a new restaurant in Paris later this year.

Shanghai-based Pairet, best known for his original three-Michelin-starred multi-sensory dining experience at Ultraviolet, and jury role on Top Chef France, will make a grand entrance to Paris' dining scene with La Brasserie d'Aumont, located in the Hôtel de Crillon in the 8th arrondissement.
"I am extremely proud and happy to join this emblematic palace. For me, it is the reference in Paris and in France. And above all, I am very excited to return to France to be able to share my most essential cuisine. It is a new challenge which is offered to me and I wish to take it up brilliantly with the teams of the hotel," said Pairet.
Pairet also already has two restaurants, in addition to Ultraviolet, all located in Shanghai: meat-centric Mr & Mrs Bund, and a casual bistro, Polux.
