Try this tasty salad recipe: the chicory, called 'puntarelle' in Italy, is dressed with garlic, anchovies and a pinch of red chili
Slice very thinly puntarelle heads place in iced water leave for 5 minutes - remove dry.
Dressing
Chop anchovy fillets, clove of garlic with salt, add chilli, vinegar and mix together to a paste.
Add olive oil.
Add dressing to puntarelle, mix together and serve.
Wine paring: Bianco di Toscana
