Slice very thinly puntarelle heads place in iced water leave for 5 minutes - remove dry.
Chop anchovy fillets, clove of garlic with salt, add chilli, vinegar and mix together to a paste.
Add olive oil.
Add dressing to puntarelle, mix together and serve.
