Looking for a tasty and vegetarian first course? Try this cheese soufflé, a challenging recipe that is going to delight your palate with cheese and spinach
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6. Grease the ramekins with butter and sprinkle them with breadcrumbs.
Quickly blanche the spinach in salt water. Quench, wring out and chop finely.
Mix together the butter, egg yolks and a pinch of nutmeg until foamy. Stir in the spinach and alternately add the cheese, cream and the crème fraîche.
Beat the egg whites until stiff and fold them into the mixture with the flour. Season with a pinch of salt and nutmeg.
Transfer the mixture into the ramekins and bake for 15-20 min until golden brown. Serve immediately.
